Winemaking: Organic Chenin Blanc grapes were harvested by hand and directly pressed. Fermentation with indigenous yeast. Bottled with no fining, filtration or added sulphur.
This Wine: Rich and complex Chenin Blanc from schist soils as the the name suggests. Highly textured and mineral with some subtle oxidative notes (nuts, bruised apple) and a wild edge. A unique and intriguing wine, especially for fans of the grape variety. Best served alongside food.
Notes on the Winemaker: Simon Rouillard trained with some of the biggest names in the Jura (Les Bottes Rouges, Bonard, Domaine de la Tournelle) before returning to his home of Anjou in the Loire valley where he acquired 2 hectares of vines and began planting more. He now produces characterful wines in tiny quantities.
