Winemaking: Certified organic grapes (with biodynamic practices) were had harvested and fermented with indigenous yeast. Traditional (Champagne) method winemaking. Kept on full lees until secondary fermentation in bottle.
This Wine: Champagne style sparkling wine with classic notes of brioche and citrus fruit but with a really strong refreshing mineral character. Easy drinking but classy. Great as an aperitif, with cheese or with salmon.
Notes on the Winemaker: The Daviau family have been winemakers in the Anjou region since the 17th century. Christophe now farms biodynamically using ancient winemaking methods and cultivates local grape varieties such as Cabernet Franc and Grolleau.
