Grape Variety: Sauvignon Blanc
Producer: Sébastien Riffault
Region: Sancerre, Loire, France
Wild Scale: 5/5
Vegan friendly wine
Winemaking: Organically grown grapes are picked very late in the season when they have over ripened (around 30% have noble rot) before fermentation in stainless steel with indigenous yeast. Aged for 2 years in tank and then 1 in old oak barrels before bottling with no filtration, fining or indigenous yeast.
This Wine: Do not buy this wine if you are looking for a classic Sancerre! Amazing intensity and complexity with dried stone fruit, gingerbread and orange skin. Best with food but still very drinkable on its own.
Notes on the Winemaker: Sébastien Riffault is known for making wines in Sancerre that very much stand out from your classic Sauvignon Blanc expressions. He picks grapes late in the season to capture some botrytis (noble rot) and then works with barrel fermentation, skin contact, deliberate oxidation and extended barrel ageing in order to come with wildly unique wines that are extremely sought after.
