Winemaking: Organic (uncertified) grapes were hand harvested and fermented in cement tank with indigenous yeast. The wine then spent 2 months in cement tank and 8 more months in old, neutral oak. Bottled with no filtration, fining or added sulphur.
This Wine: Big and bold red wine from the North West of Italy which still shows finesse. There is quite a lot of CO2 on opening which some people like but if you don't, you should decant and it will fade off. All fruit, herbs and no oak allow the wine to really showcase the true character of the Barbera grape. Perfect for the Autumn and winter months. Stands up well to all meat dishes.
Notes on the Winemaker: Francesco and Pauline make natural wine under the name Tenuta Foresto in Nizza Monferrato which is just south of Asti. They follow the methods of Japanese farmer and philosopher Masunobu Fukuoka in order to have as little impact on the natural ecosystem as possible.
