Winemaking: Organic grapes were harvested by hand and underwent a 20 day whole bunch maceration. Fermentation with indigenous yeast and aged in old barrels for 2 years. Bottled with no fining, filtration or added sulphur.
This Wine: One of the best skin-contact wines we have tried in sometime. There is an abundance of citrus and tropical flavours (including tangerine) but also real finesse and class which comes from the high acidity. Special and unique.
Notes on the Winemaker: François is part of a collective in a small village called Berrie (not far from Saumur) who have looked to restore buildings in their hometown and breathe new life into the surroundings by creating a community of natural winemakers. He is uncompromising in his approach to winemaking and avoids using sulphur at any stage as he believes it limits the potential of his wines.
