Winemaking: Organic Macabeo grapes from 2 plots were hand harvested and crushed before spending some time on the skins. Fermented with indigenous yeast and the wine was bottled before this process was complete in order to create fizz in the bottle (ancestral winemaking technique, pet nat). Aged for 12 months on the lees before being disgorged. No filtration, fining or added sulphur.
This Wine: A serious Pet Nat with a great balance of fruit and mineral characteristics. The complexity makes it a a great accompaniment for food.
Notes on the Winemaker: Jordi is situated in Blancafort in the Conca de Barberà of Catalunya where the Mediterranean climate brings plenty of heat to the grapes. His wines benefit from cooler nights which helps retain acidity and freshness. He took over his family's winery in 2000 before converting to fully natural by 2012.
