Winemaking: Organically grown (uncertified) grapes were hand harvested before fermentation with indigenous yeast before spending 9 months in old oak barrel. The wine is then moved to a stainless steel tank for 2 months with some space for oxygen. This allows a veil of flor to form on the top of the wine, imparting unique flavours. Bottled with no filtration or fining and just a small amount of sulphur.
This Wine: A natural white wine made under flor which gives unique flavours of eucalyptus, herbs and almonds alongside citrus fruits. Only 3000 bottles produced. Great with seafood.
Notes on the Winemaker: Ruben Diaz is born and bred in the Gredos region where he works organically and keeps alive ancient winemaking techniques of minimal intervention. he works with local grape varieties Garnacha and Albillo.
