Winemaking: Organically (certified) and Biodynamically (uncertified) grapes were hand harvested and fermented with indigenous yeast. Aged for 9 months in concrete egg. Bottled with no fining, filtration or added sulphur.
This Wine: A natural red wine with real class and finesse. Amazing complexity with both fresh and stewed fruit flavours along with something reminiscent of creme caramel. Finishes with a nice hint of eucalyptus and a crunch of tannin. Medium to full bodied.
Notes on the Winemaker: Pauline Mourrain & Laurent Troubat met helping out at a vineyard in Australia (hence the name of their winery) before heading to back to France to continue wine studies. They then lease parcels in the esteemed vineyards around Saumur in the Loire where they create beautifully made reds from Cabernet Franc and whites from Chenin Blanc.
