Winemaking: Organic (uncertified) grapes were hand harvested all at the same time (field blend) and co-fermented with indigenous yeast before being bottled
This Wine: A natural white wine bursting with flavours of green apple, quince and floral notes. As the grapes were all picked at the same time, different varieties and had different levels of ripeness which results in a less precise but more fun wine. High acidity and salinity.
Notes on the Winemaker: Rosi Schuster has handed most of the winemaking duties over to her son Hannes now and the wines authentically reflect this region of Austria. They work the 9 hectares of land organically and produce precise but exciting wines.
