Winemaking: Organic Carignan and Grenache grapes were harvested by hand and fermented with indigenous yeast in fibreglass tanks. Bottled with no filtration, fining or added sulphur.
This Wine: A natural red wine with complexity and depth thanks to the relatively long ageing time in bottle. A great balance of baked black fruit flavours, savoury notes and a strong mineral backbone. Should definitely be served with a hearty dish.
Notes on the Winemaker: Joe Jefferies hails fro Warwickshire but ended up in the Southern French village of Caux after falling in love with his partner whilst visiting the region. Now he is connected to like-minded natural winemakers in the area and never makes any additions to his wines which are full bodied but always retain freshness and minerality.
