Winemaking: Organic Carignan, Grenache and Grenache Gris grapes were harvested by hand and underwent whole bunch maceration 6 days. Fermented with indigenous yeast in fibreglass tanks. Bottled with no filtration, fining or added sulphur.
This Wine: Natural red wine with body and depth but balanced nicely by great acidity and delicate, perfumed fruit. A new cuvée from the winemaker, inspired by lyrics from Bob Dylan's "A Hard Rain's A Gonna Fall".
Notes on the Winemaker: Joe Jefferies hails from Warwickshire but ended up in the Southern French village of Caux after falling in love with his partner whilst visiting the region. Now he is connected to like-minded natural winemakers in the area and never makes any additions to his wines which are full bodied but always retain freshness and minerality.
