Winemaking: Organic/Biodynamic Chardonnay grapes from 60 year old vines in Meursault were harvested by hand. Fermented with indigenous yeast and transferred to old oak barrels for 15 months. Bottled with no filtration or fining and just a tiny amount of sulphur.
This Wine: Still white Burgundy with a full, creamy body, strong acidity and high intensity. Lemon aromas and a touch of smokey reduction bring the wine to life. Best served with dishes such as vegetables, fish or white meat.
Notes on the Winemaker: Pierre Fenals became intrigued with Biodynamic farming after picking up one of Rudolph Steiner's books at a Parisian flea market. He was working in marketing for fashion houses at the time but the subject interested him so much that he eventually ended up making biodynamic wine in some of the most prestigious vineyards of the world. I had lunch with him in Puligny-Montrachet on my first ever trip to Burgundy and was lucky enough to taste many of his amazing wines in his cellar. (Andrew)
