Winemaking: Organic grapes from 100 year old Semillon vines are harvested by hand and spontaneously fermented on the skins with indigenous yeast in old oak barrels. No filtration or fining. Small amount of sulphur added on bottling.
This Wine: Unique, skin contact wine with high acidity and medium body. Citrus and tropical notes with a strong herbal character running though, we thought maybe mint? Once again, a wine from Roberto that is like no other! Complex with high intensity so best partnered with food.
Notes on the Winemaker: Roberto Henríquez hails from Concepción, Chile but travelled and worked with winemakers in Canada, South Africa and the Loire Valley before returning home to concentrate on the traditional Pipeño methods of winemakers in Chile. He visited us at the bar in early 2020 to share some of his latest magical creations but had to settle for a Millwall game as Arsenal were playing away that weekend :/
