Winemaking: Organically (uncertified) grown grapes were hand harvested and fermented with indigenous yeast. Juice from direct press and maceration were blended together. Aged in terracotta amphora for 6 months and bottled with no filtration, fining or added sulphur.
This Wine: A very light red wine with aromas of fresh cherries and blackcurrants. Almost no tannin and loads of acidity. Some delicate earthy notes balance the profile well. Drink slightly chilled.
Notes on the Winemaker: Stéphanie Roussel makes natural wine in South West France, just outside Bordeaux She has a real passion for ageing wine in amphora vessels and uses local varieties to give a true representation of the regions winemaking history and character.
