Winemaking: Biodynamic grapes are hand harvested and then 50% is destemmed whilst the other 50% undergoes whole bunch maceration for a period of 5 days. Fermented with indigenous yeast in stainless steel tanks and aged in the same tanks before bottling with no fining or filtration and just 2mg/l of sulphur.
This Wine: Biodynamic orange wine at a bargain price. Aromas of orange peel and stone fruit with a nice balance of aromatics. A great entry point to the world of skin contact wines.
Notes on the Winemaker: Fattoria Vaira is a very large Biodynamic farm which produces fruit, vegetables, cheese, honey, olive oil and wine in the Molise region of Italy just south of Abruzzo. Biodynamic practices have been used for years meaning the soil has returned to an almost wild state.
