Winemaking: Organically grown grapes were hand harvested and crushed before a 4 month skin maceration period. Fermented in old Austrian Oak with indigenous yeast and bottled with no fining or filtration. Small amount of sulphur added.
This Wine: A natural wine, fermented to dry with only 8% alcohol volume. Vibrant tropical and stone fruit and nicely textured with some tannins. Best with food. The Sercial grape is native to Portugal and is often used on the island of Madeira to produce fortified wine.
Notes on the Winemaker: David Geyer and Koen Janssens have been working together since 2015 with a mission to produce unique and exciting expressions of grapes such as Gewurtztraminer and Savagnin all the way down in Southern Australia.
