Winemaking: The Xarel Lo grapes come from a single plot vineyard just 1.1 hectares in size with biodynamic practices. The vines were planted in 1982. After manual harvest, grapes are cooled for 24 hours before the juice spends 6 months with the skin. Fermentation with indigenous yeast in stainless steel. Bottled by lunar calendar with no filtration, fining or addition of sulphur.
This Wine: One of our favourites! Really juicy and dense with beautiful pink grapefruit aromas and a hint of smoke. A unique and special wine from a winemaker is high in demand. The wine doesn't keep long after opening but that probably won't be a problem as it's so delicious!
Notes on the Winemaker: Toni Carbó is one half of the esteemed Cava house (with friend Ramon Jané), Mas Candí in Penedés. He started his own project La Salada in 2012 to focus on making wines like his Grandfather used to. They are some of most sought after as they provide an authentic and honest expression of Catalan terroir.
