Winemaking: Organically grown grapes were hand harvested underwent fermentation with indigenous yeast in stainless steel tanks. Once this base one was made, must was added to start a second fermentation. Rested on the lees for 20 months. No fining, filtration or added sulphur.
This Wine: Natural sparkling rosé wine with depth and complexity. The extended ageing has brought a savoury edge which is complimented by bright, red fruit flavours. A serious wine that would pair well with fish and light meat dishes.
