Winemaking: Grapes from 30-80 year old vines were hand harvested and underwent fermentation with indigenous yeast. Ancestral method (pet nat) winemaking techniques were used to produce the second fermentation in bottle. Aged for 18 months before disgorgement. No added sulphur.
This Wine: A sparkling, light pink pet nat with a nice balance of fruity and savoury characteristics. The inclusion of the rare Pineau d'Aunis grape brings a wilder edge. Great as an aperitif or with a light food dish. We think it could work well with sushi.
Notes on the Winemaker: Les Capriades is the project of Pascal Potaire and Moses Gadouche who produce only ancestral method sparkling wine (Pets Nats) from grapes grown by them or sourced from other farmers around the Loire Valley. We first tried one in Paris a few years ago and haven't found many Pet Nats that can compete! Full of class and character. They page huge attention to detail and disgorge every bottle by hand.
