Winemaking: Organic Riesling grapes were purchased from Jean-Marc Dreyer in Alsace. Fermentation with indigenous yeast. Bottled with no fining or filtration and just a touch of sulphur.
This Wine: Rich and precise white wine with amazing precision and perfect acidity. Citrus and orchard fruit flavours. Very rare with 155 bottles produced.
Notes on the Winemaker: Bastian Wolber is a negociant winemaker in Germany who purchases grapes from some of the biggest names in the natural wine world. He learnt from the best after studying under Jean-François Ganevat in Jura. His wines are clean and precise but intense and full of character.
