Winemaking: Organically grown grapes grown on Limestone soil are picked very late in the season when they have over ripened (around 50% have noble rot) before being crushed. The juice remained in contact with the skins for a period before in old oak barrels with indigenous yeast. Aged for 2 years in barrel before bottling with no filtration, fining or indigenous yeast.
This Wine: Skin contact wine with a bit of everything going on. Don't expect a clean and crisp Sancerre. Instead you will find oxidative notes of bruised/cooked apple, citrus peel, preserved lemon and some salinity. A wild one!
Notes on the Winemaker: Sébastien Riffault is known for making wines in Sancerre that very much stand out from your classic Sauvignon Blanc expressions. He picks grapes late in the season to capture some botrytis (noble rot) and then works with barrel fermentation, skin contact, deliberate oxidation and extended barrel ageing in order to come with wildly unique wines that are extremely sought after.
