Winemaking: Organic Chenin Blanc grapes were harvested by hand and underwent whole bunch direct press before fermentation with indigenous yeast in amphora vessels. Aged in the same amphora under a veil of flor. No fining, filtration or added sulphur.
This Wine: Natural white wine with amazing intensity and complexity. There is a strong herbaceous character from the flor which makes this a great wine to pair with dishes that include herbs such as dill or fennel. The winemaker did some studying in Loire and fell in love with Chenin Blanc hence why he plated it in his native Hungary.
Notes on the Winemaker: István Bencze is a pioneer of natural winemaking in Hungary. His vineyards are situated on the Szent György hill, in Badacsony. He works meticulously in the vineyard, harvesting at multiple times in order the achieve the right balance in the final wine.
