Winemaking: Organic Clairette and Chardonnay grapes were harvested by hand and underwent whole bunch maceration for 5 days. Pressed into tank for 9 months ageing. Bottled with no fining, filtration or added sulphur.
This Wine: Natural white wine with good acidity and balance despite the warm climate here in the Languedoc. Wild green apple and salty apricot flavours. Light and fresh for Spring.
Notes on the Winemaker: Mas Blanc is the farm, Le Temps de Cerise is the winery and Axel Prüfer is the man. He produces wines from some the Languedoc's most dramatic vineyards near Beziers which are rustic but precise at the same time.
