Winemaking: Organic (uncertified) grapes were hand harvested and fermented in cement tank with indigenous yeast with carbonic maceration techniques. Bottled with no filtration, fining or added sulphur.
This Wine: A natural red wine with a light to medium body. Slightly more savoury than the 2019 vintage and a bit more classic Piedmonte style. Dark fruits with an earthy edge. Great by itself or with white meat dishes.
Notes on the Winemaker: Francesco and Pauline make natural wine under the name Tenuta Foresto in Nizza Monferrato which is just south of Asti. They follow the methods of Japanese farmer and philosopher Masunobu Fukuoka in order to have as little impact on the natural ecosystem as possible.
