Winemaking: Organic grapes (uncertified) are fermented in stainless steel and then the wine is aged in concrete eggs on the lees for 1 year before and extra 6 months ageing in bottle. No malolactic conversion. Filtered using cellulose. No fining. Bottled with sulphur. Only 1,800 litres produced every 2 years.
This Wine: An intense and complex expression of Albariño with added complexity from the extended lees contact. Something special for lovers of this grape variety. Calabobos is a term used in Galicia to describe the constant drizzle of rain that the region is infamously known for.
