Winemaking: Organically/Biodynamically farmed grapes are fermented with indigenous yeast with a 4 day maceration period. Wine is bottled with no filtration, fining or added sulphur.
This Wine: A biodynamic red wine with precision and elegance. Medium to full bodied with aromas of black olive, red berries, blackcurrants and a hint of leather. High acidity keeps things fresh. Great with red meat or tomato based dishes.
Notes on the Winemaker: Carmen Lopez Delgado & Luiz Ruiz Martin focus on the variety Graciano which is unusual in this region of Spain known predominantly for Airen which usually produces table wine. They describe sulphur as an atom bomb to wine so don't use it in any instance. They are experts in Biodynamics and are part of Nicolas Joly's prestigious La Renaissance des Appellations group.
