Winemaking: Organic grapes (uncertified) were hand harvested and underwent spontaneous fermentation with indigenous yeast in old oak barrels. Aged in barrel for 12 months and then bottled with no fining, filtration or added sulphur. Aged in bottle for another 3 months before release.
This Wine: Deep, full bodied red wine with notes of blackcurrant, cherry and plum. Soft and ripe tannin give a roundness on the palate. Great for heavier food dishes such as stews or red meat.
Notes on the Winemaker: Francesco and Pauline make natural wine under the name Tenuta Foresto in Nizza Monferrato which is just south of Asti. They follow the methods of Japanese farmer and philosopher Masunobu Fukuoka in order to have as little impact on the natural ecosystem as possible.
