Winemaking: Biodynamic grapes were harvested by hand and the 2 varieties were co-fermented in whole bunches in old oak and glass demijohn with indigenous yeast. Ancestral method winemaking technique used to produce second fermentation in the bottle. Lightly disgorged. No fining, filtration or added sulphur.
This Wine: A natural sparkling wine (Pet Nat) with a hint of residual sugar making it slightly off dry. Only 367 bottles made! (We will update tasting notes when we get a chance to try!)
Notes on the Winemaker: Daniel and Nicola Ham were marine biologists before embarking on a natural wine adventure in what may have seemed the most unlikely of regions, Wiltshire! They purchase organic fruit from different plots around the UK and are now making some of the best local wines we have ever tried.
