Winemaking: Organic grapes were harvested by hand and the 2 varieties were co-fermented in whole bunches with indigenous yeast in stainless steel. Ancestral method winemaking technique used to produce second fermentation in the bottle. Not disgorged. No fining, filtration or added sulphur.
This Wine: A natural sparkling wine (Pet Nat) with a hint of residual sugar making it slightly off dry. Orchard, citrus fruit and even a hint of bruised banana. You might get an impression of tarte tatin with burnt caramel and lemon sherbet. Very complex for a pet nat! Perfect as an aperitif or with a light fish starter. Only 565 bottles made!
Notes on the Winemaker: Daniel and Nicola Ham were marine biologists before embarking on a natural wine adventure in what may have seemed the most unlikely of regions, Wiltshire! They purchase organic fruit from different plots around the UK and are now making some of the best local wines we have ever tried.
