Winemaking: Organic Syrah grapes were harvested by hand. Fermentation with indigenous yeast in fibreglass tanks and bottled before this process was complete in order to create fizz inside the bottle (Ancestral winemaking technique - Pet Nat). Bottled with no fining, filtration or added sulphur.
This Wine: Sparkling red Pet Nat which is a juice bomb of fresh cherry and strawberry flavours. Our new "go to" fizzy red now that there will be no Naturlich from Landron-Chartier. Quenches the thirst!
Notes on the Winemaker: Marine Leys has had many adventures before settling down in Gaillac as a winemaker. She worked as a diving instructor and underwater photographer before heading to Turkey to learn her future trade. Now she make honest wines from local varieties from 5 hectares of vines.
