Winemaking: Biodynamic grapes were hand harvested and de-stemmed before being put into a terracotta jar in September 2017 for 2 months before they were pressed. The fermenting wine was then put back into the jar until April 2019 when it was bottled with no fining, filtration or added sulphur.
This Wine: Not your usual Bourgogne Aligoté! The skin contact and ageing in terracotta adds body and texture to the wine as well as a more savoury and rounded flavour profile. Still light in colour despite the production method. A wine to take time over.
Notes on the Winemaker: Pierre Fenals became intrigued with Biodynamic farming after picking up one of Rudolph Steiner's books at a Parisian flea market. He was working in marketing for fashion houses at the time but the subject interested him so much that he eventually ended up making biodynamic wine in some of the most prestigious vineyards of the world. I had lunch with him in Puligny-Montrachet on my first ever trip to Burgundy and was lucky enough to taste many of his amazing wines in his cellar. (Andrew)
