Winemaking: Organic (uncertified) grapes were hand harvested crushed by foot before fermentation on the skins with indigenous yeast. Aged across old oak, stainless steel and concrete. Bottled with no fining or filtration and just a touch of sulphur.
This Wine: A natural skin contact wine with a hazy, yellow appearance. Complex flavours of grapefruit, passionfruit, mango and elderflower. Zesty and saline with a textured mouthfeel. It reminded us of Wilder Satz but with a bit more complexity.
Notes on the Winemaker: Tillingham is situated on a 13th Century Farm near the village of Rye in East Sussex. They follow a 'progressive' mantra which blends technology with ancient traditions of winemaking. Biodynamic preparations are used in the vineyard and wines are bottled with as little sulphur as possible.
