Winemaking: Co-planted grape varieties were harvested by hand and de-stemmed by hand (!) before fermentation with indigenous yeast. Ancestral winemaking techniques (Pet Nat) where the wine was bottled with residual sugar and fermentation continues in bottle. No fining, filtration or added sulphur.
This Wine: A natural sparkling wine (Pet Nat) with a hint of residual sugar making it off dry. Juicy red fruit flavours that are fresh and candied. Great to share with friends over a slightly sweet dessert or by itself as an aperitif.
Notes on the Winemaker: Dido and Jurriaan hail from the Netherlands and travelled the world learning winemaking before settling right in the North of Catalunya not far from the French border. They crowdfunded their vineyard purchase and are now on their 2nd vintage making wine that is full of joy. We visited in 2019 and listened to records in their winery whilst tasting samples. Each cuvee has a different reference to one of their favourite musicians.
