Winemaking: Organic (uncertified) grapes were hand harvested and fermented in cement tank with indigenous yeast with carbonic maceration techniques. Bottled with no filtration, fining or added sulphur.
This Wine: A natural red wine with a light to medium body. A much fruitier style than your standard Dolcetto from this region. If you like Beaujolais, then try this as it's made with the same technique. Great by itself or with white meat dishes.
Notes on the Winemaker: Francesco and Pauline make natural wine under the name Tenuta Foresto in Nizza Monferrato which is just south of Asti. They follow the methods of Japanese farmer and philosopher Masunobu Fukuoka in order to have as little impact on the natural ecosystem as possible.
