Grape Variety: Gamay
Producer: La Dernière Goutte (Cyrille Vuillod)
Region: La Chaumière, Beaujolais, France
Wild Scale: 4/5
Winemaking: Organic (uncertified) grapes were hand harvested before fermentation with indigenous yeast. No filtration, fining or added sulphur.
This Wine: A natural Beaujolais with earthy notes that balance the raspberry fruit perfectly. High in acidity and complexity. More serious than your average Beaujolais as the traditional carbonic maceration technique was not used on this wine. The name means "The Drunken Whale".
Notes on the Winemaker: Cyrille Vuillod was a ski instructor in the Alps before embarking on the journey to become a natural winemaker in Beaujolais after studying under Jean-Claude Lapalu. Situated on the edge of Brouilly, he now produces no or low sulphur Gamays and some white wine made from Chardonnay.
