Winemaking: Organically (uncertified grapes) were hand harvested and fermented with indigenous yeast. Aged for 6 months in stainless steel. Bottled with no fining, filtration or added sulphur.
This Wine: Natural white wine with great complexity. Floral, mineral, saline and tropical notes. Hazy, textured and pretty wild so probably not for natural wine beginners!
Notes on the Winemaker: Nuria Renom was a sommelier at the infamous Bar Brutal in Barcelona when she started the journey to becoming one of the most exciting winemakers in Catalunya. She is currently working out of the cellar of La Salada (another Highbury Library fave) where she is making tiny productions of wines that burst with life and energy. The wines are not cheap but they are certainly worth it.
