Winemaking: Grapes were hand harvested and underwent semi-carbonic maceration with indigenous yeast before being topped up with rosé. Bottled with no fining, filtration or added sulphur.
This Wine: Somewhere between a light red and a rosé, this hazy pink wine has bursts of strawberry fruit with a finish of dried herbs. Refreshing salinity and high acidity.
Notes on the Winemaker: Borachio is the project of Alicia Basa and Mark Warner who make natural wines with no added sulphur with fruit sourced from Mount Compass and Mount Torrens just outside Adelaide in South Australia.
