Winemaking: Organic grapes were hand harvested and underwent fermentation with indigenous yeast on the skins for 2/3 weeks in stainless steel. Bottled with no fining or filtration and just a small amount of sulphur.
This Wine: A natural wine with amazing but refined aromatics. Hints of pepper, fennel and pear. Pure, clean and dry. Notro is a tree in this part of Chile.
Notes on the Winemaker: Roberto Henríquez hails from Concepción, Chile but travelled and worked with winemakers in Canada, South Africa and the Loire Valley before returning home to concentrate on the traditional Pipeño methods of winemakers in Chile. He visited us at the bar in early 2020 to share some of his latest magical creations.
