Winemaking: Organic grapes (uncertified) were hand harvested before fermentation with indigenous yeast. Ancestral (Pet Nat) winemaking methods were used. Bottled with no filtration, fining or added sulphur.
This Wine: A sparkling "rosat" (somewhere between red and rosé) from one of the Pet Nat masters of Catalunya. Juicy red fruit balanced with floral and perfumed aromas from the Muscat. Very fun.
Notes on the Winemaker: Clos Lentiscus is the project of Manel Avinyo who started making wine in 2002 and has worked naturally since 2010. He uses honey from his bees to kickstart the second fermentation in his sparkling wines.
