Winemaking: Organic (uncertified) grapes were hand harvested and crushed before a 3 day maceration period. The fermentation with indigenous yeast continued in concrete tanks. The wine was then aged in old, neutral oak for 10 months before being bottled with no filtration, fining or added sulphur.
This Wine: Aromatic orange wine with delicate notes of stone fruit and pink grapefruit. A balanced floral edge with crisp and clean finish.
Notes on the Winemaker: Francesco and Pauline make natural wine under the name Tenuta Foresto in Nizza Monferrato which is just south of Asti. They follow the methods of Japanese farmer and philosopher Masunobu Fukuoka in order to have as little impact on the natural ecosystem as possible.
