Winemaking: Organic Albillo grapes were harvested by hand and fermented with indigenous yeast. The wine was bottled before fermentation was complete in order to create fizz in bottle (Pet Nat - Ancestral winemaking techniques). No filtration, fining or added sulphur.
This Wine: Hazy white sparkling wine with high acidity and great concentration of citrus and tropical fruit, particularly melon. Full bodied and textured.
Notes on the Winemaker: Fabio Bartolomei is of Scottish and Italian descent but he now resides in the Sierra de Gredos region of Spain, not far from Madrid. He is quite a character and this really translates to his wines which are certainly at the deep end of the natural wine spectrum. Each cuvée tends to be a real surprise but they always burst with energy and personality.
