Winemaking: Organic Bacchus, Pinot Noir and Pinot Gris grapes grown by Ham Street were harvested by hand. Offbeat then took over for the winemaking. The Pinot Noir grapes were stomped by foot whilst the other 2 varieties underwent an overnight maceration. Fermentation with indigenous yeast and the wine was bottled before this process was complete in order to create fizz in the bottle (Ancestral winemaking technique - Pet Nat). No filtration, fining or added sulphur.
This Wine: A sparkling Pet Nat wine made with both red and white grapes. Very small production so we were olny allowed to buy 6 bottles! We will report back when we have tasted!
Notes on the Winemaker: Lucie and Jules grow grapes in Kent using organic and biodynamic farming practices (with certification to follow soon). Daniel and Nicola at Offbeat purchase many of these grapes to make their own wine with and Dan has spoken to us enthusiastically about the quality of fruit produced. This year Dan has made a wine for them bottled under the Ham Street label.
