Winemaking: Grape varieties were sourced from different plots around the UK. Each underwent a skin contact period of 2 to 7 days. Aged in barrels and demi-john before blending. Bottled with no fining, filtration or added sulphur.
This Wine: Knowing how much Dan likes to blend different wines together, we can only imagine how much fun he had with this. After collecting various varieties that had been macerated, this is the result. Tropical and saline and maybe one of the most exciting English wines we have ever tried. A fun but complex skin contact wine.
Notes on the Winemaker: Daniel and Nicola Ham were marine biologists before embarking on a natural wine adventure in what may have seemed the most unlikely of regions, Wiltshire! They purchase organic fruit from different plots around the UK and are now making some of the best local wines we have ever tried.
