Winemaking: Organic (uncertified) grapes were hand harvested and fermented in cement tank with indigenous yeast. Ancestral techniques (pet nat) were used where the wine underwent second fermentation in bottle. No fining, filtration or added sulphur.
This Wine: A sparkling red wine (pet nat) with loads of blackcurrent and cranberry flavours along with mouth tingling acidity. Limited quantities so it never stays for long.
Notes on the Winemaker: Francesco and Pauline make natural wine under the name Tenuta Foresto in Nizza Monferrato which is just south of Asti. They follow the methods of Japanese farmer and philosopher Masunobu Fukuoka in order to have as little impact on the natural ecosystem as possible.
