Winemaking: Organic Mansois and Gamay grapes were purchased from elsewhere and underwent whole bunch direct press before fermentation with indigenous yeast in stainless steel tanks. Bottled with no fining, filtration or added sulphur
This Wine: Very light red (or rosé) wine with candied fruit flavours and high acidity. The name translates as 'Black Market' to indicate that Edouard purchases these grapes to make a negotiant wine.
Notes on the Winemaker: Edouard Adam is yet to reach 30 years old but is making exciting and expressive natural wines in southern France. He is going against conventional styles from this region by producing light expressions from red grapes and skin contact whites. One to watch!
