Winemaking: Organic Cabernet Franc grapes from 80 year old vines were harvested by hand and underwent whole bunch maceration for 10 days. Fermented with indigenous yeast. Bottled with no fining, filtration or added sulphur.
This Wine: Natural red wine that is light in colour but has an amazing depth of fruit. The nature of this fruit is now quite developed (thanks to the age)so you get some delicate blackcurrant jam notes and some pleasant earthy and smokey undertones. Very special and unique. (Note that there can be some CO2 in this wine. If you don't like that, you should decant).
Notes on the Winemaker: Francois is part of a collective in a small village called Berrie (not far from Saumur) who have looked to restore buildings in their hometown and breathe new life into the surroundings by creating a community of natural winemakers. He is uncompromising in his approach to the craft and avoids using sulphur at any stage as he believes it limits the potential of his wines.
