Winemaking: Organic Cabernet Sauvignon and Grolleau grapes were harvested by hand. 3 week carbonic maceration and fermentation with indigenous yeast. Bottled with no filtration, fining or added sulphur.
This Wine: Natural red wine that is light in body. Rarely do you find such a juicy Cabernet Sauvignon but thanks to the carbonic maceration technique, this wine is all about fruit. Great served slightly chilled.
Notes on the Winemaker: Cédric Garreau's goal is to produce unpretentious natural wines that are easy to drink, full of life and all about the fruit. He believes that sulphur has a negative effect on the quality of the grapes and although this sometimes makes life more difficult, he believes it's worth the risks of working SO2 free all the time.
