Winemaking: Organic Chardonnay grapes were harvested by hand. Fermentation with indigenous yeast. Bottled with no fining or filtration and just small amount of added sulphur.
This Wine: A still white wine with a round body but still lots of refreshing acidity. Salty with green apple and white peach flavours. Precise, nothing funky going on. A classy Beaujolais Blanc.
Notes on the Winemaker: Séléné is the natural wine project of Sylvère Trichard and Mathidle Sothier who work 4 hectares of vines near Blacé in Beaujolais. They have been focussing on growing biodiversity in the area by planting trees for an orchard whilst also employing biodynamic techniques in the vineyard.
