Winemaking: Organic grapes were harvested by hand early and de-stemmed before fermentation with indigenous yeast in concrete tanks. Bottled with no fining, filtration or added sulphur.
This Wine: Pure and clean Chardonnay with no oak flavours. This is all about fruit, albeit more subtle than you might expect in this climate as these grapes come from North facing vineyards. This helps retain freshness and acidity which balances well with the medium to full body of this wine. Very drinkable and can be enjoyed by itself or alongside a meal.
Notes on the Winemaker: Laetitia Ourliac and Rodolphe Gianesini are the duo behind Fond Cyprès in Corbieres, Southern France. Their vineyards have been certified organic since 2006. They produce honest wines from local grape varieties that offer great value for money.
