Fermentation with wild yeast and aged in old oak barrels for 15 months. Unfiltered, unfined, no added sulphur.

This Wine: From the Viré Classé appellation of the Mâconnais, this is a full bodied white Burgundy. A blend of 2018, 2020, 2022 and 2023 vintages this is rich and textured but with lifting acidity. A gastronomic wine that will keep getting better for many years.

Notes on the Winemaker: Philippe Valette took over his family winery in 1990 and almost immediately introduced organic farming practices so these vines in the south of Burgundy have been worked organically for over 30 years. He has developed a serious reputation despite never being one to shout about himself. In recent years Philippe has taken to blending different vintages together to achieve amazingly balanced cuvées that are full of power and structure but have the acidity to match.
